A Fun Weekend | Sushi & a Snowy Hike

Happy Monday everyone! Hope your weekend was enjoyable!

I thought it might be fun to do a little weekend recap when some fun things are planned. It will be nice to look back on these in the future when I’m old and my memory is terrible 😂

I woke up super early on Friday morning. Some days I get the strange urge to be Betty Crocker and cook all sorts of things for breakfast. I think I need to get out of the house a little more and in to the public. That way I will stop using all of our pantry items on pancakes, bagels, and muffins. It’s sort of a strange addiction that I have.

At 6 am I started making homemade bagels. If any of you are gluten free, you know just how expensive a package of gluten free bagels are. The last time I bought some I paid roughly 6-7 dollars for a 4 pack. Kinda ridiculous. I searched through so many different recipes and finally landed on one that can be made GF and dairy free. Honestly, they turned out SO GOOD, and I know I will be making tons more in the future.

A decent first attempt… I will be making these weekly. They are that good!

After my workout, I usually spend my Friday afternoons trying to get some housework done before the weekend. Laundry, dishes, and tidying up are a must. I’m a total neat freak and I hate it. I know my husband does too. I’m really trying to get better about being this way, but my grandma is the same way, and so is my mom. I come by it honest, okay? I’ll just be over here sweeping up all the crumbs 😂

This week is my brother’s last week here in Montana. He’s been living here for about four years and is ready for a place with nicer weather, so he’s heading to Charleston, South Carolina. I absolutely hate this, but what can I do? We decided that we needed to go out and enjoy his last weekend here!

  • Massive Attack Roll:

My brother decided to try this roll first. It has spicy crab, avocado, mango, and cream cheese. Then pankoed and fried. It looked so good!

  • Aroy Mak Bai Roll:

My brothers second roll had crawfish, crab, and shrimp. It had a bunch of sauces and pastes, and topped with roe. He said it was really good, but the first one was his favorite!

  • Shoots Brah! Roll:

I wasn’t overly hungry, so I decided to order this smaller roll. It had spicy salmon, cod, pear, mango, lemon, and honey. This was so good.. and even though I wasn’t that hungry I definitely wanted more!

I hadn’t had sushi is so long, so this was extremely overdue. Ryley about gagged when he tried the sushi, so I had it all to myself. No complaints here. I guess I’ll be having sushi dinner dates with myself from now on!

Saturday morning, Ryley and I woke up ready to get moving! The sun was shining and it was about 36 degrees outside! It almost felt like spring is on it’s way. I can’t wait! We decided to take a walk up in the mountains on one of our favorite trails. It was so much snowier up there and absolutely gorgeous! There were so many people cross country skiing, and we decided that we need to try it ASAP.

We only made it about 30 minutes up the hill, but it was so nice to be out in the sun for once. I can’t even tell you how many cloudy days we’ve had here this winter!

We spent most of Sunday at church. We have a morning service and an evening service, and we also had a potluck yesterday. I made a fruit and spinach salad with a balsamic dressing that is super tasty. I will be writing a post on it soon 😄 It was such a busy day, but really nice to catch up with everyone from church.

I know this is a semi-boring post, but I wanted to highlight some fun, new things I tried this weekend. It’s not every weekend a girl gets a fancy cocktail, some sushi, and sunshine!
